This amounts to 4 large breast portions. 4 large Leg portions, 4 snack wings for picnics. 200g of body meat, and about 1.5 litres of stock for gravy, soups sauces.
I will be taking off any further fatty bits from the bones when they come out of the pressure cooker, and blending them with that leftover veg for the wormery.
For a roast dinner we would have a Leg each. For a curry or risotto just one breast. I remember when I was a child, a chicken about this size fed 7 people in our house. My Dad had a whole leg. I got a drumstick and two slices of breast meat. We all knew which bits we got! Then we had 'Chicken Muckabout' the next day with the carcass strippings. (A sort of oven risotto!). One small Chicken did 14 portions of food!
