These are personally specific antibiotic yeasts. As I taste them the check how they are maturing, I have already had the obvious side effects to a pathogenic Yeast departure. (Furry tongue). Now my urine smells of natural antibiotics. Obviously not eating refined foods or sugars is a huge factor in this process.
I managed to salvage the bread tin. I worked out why the yeast wouldn’t behave itself. The Israeli Medjool dates must have some glycerine in them. They are far too squidgy. I put three in the loaf and it turned into a brick. I decided to stick it in the oven again and baked it for another hour. I hoped it would harden its crust and shrink the loaf. It did. After five good taps on a dish cloth it sprung out.
Anyway the non stick bread tin is being soaked. It will have to have a greaseproof liner in it in future. Or a Cabbage leaf!
Anyway the cultures and general treatment of the yeasts are the same. The one on the left just wants the stoneground water milled flour, and a small amount of spelt and buckwheat. The one on the right isn’t in the slightest bit bothered about the stoneground flour and likes the spelt and buckwheat. I ran out of Kamut a few days ago, which is what the original starter was made with. They are both missing their friend Kamut!
They liked the medicine. I told them they can’t have any more unless they get smelly. They said they would rather smell nice like the Geranium Oil and definately not to use the oil of oregano in anything but very diluted form. Way too hot to handle!
Anyway while I was making sure they have enough cross referencing in their gene pools. A little intermarriage via a spoon, we don’t want them falling out when they make bread together, I thought this is quite a good allegory for the banking structure as well.
I suppose I am the rustic sort who likes saving and checkbooks. The spelt and buckwheat Lot like credit cards and running a negative debit balance. I came to a sneaky suspicion that banks have been using the actual positive credit balance in peoples check accounts for liquidity. I wondered if someone moved some actual real money to another bank, and the new bank wanted the money unlevereged, as it is real money... on principle?
I wondered if it caused a credit card meltdown the other day until the directors had a whip-round and bailed out the bank... I like my World, I can muddle around at home getting up to all sorts of mischief.
I can hang out with God all day, just knowing He is around, and looking after the house and especially my Husband and the dog.
I need to pull my finger out of the light socket and get some proper gardening work done.
I will update the yeast cultures next week when they have matured a bit. Unless they do something very interesting which is outstanding. I am very pleased with them, they are doing very nicely.
The air pressure and temperature has been perfect to culture these two. Lots of damp in the atmosphere as well at the moment. I think they need a bit of up and down air pressure soon.
Anyway, even the birds didn’t eat much of the bit of loaf I salvaged from the bread tin. It didn’t taste nice. I just swept it up and washed their table. They got some spice bread and herb bread instead this morning. The wonderful thing is, I just saw a house sparrow. I haven’t seen one round here for a couple of years. This usually means there is less internet and phone activity. They don’t breed well in highly saturated EM areas.
That was a delight to see a Sparrow perched on my garage roof. The Word is out there I still some good bread round here then!
